- Salsa de tomate
- Picamos la cebolla y el ajo bien pequeño y lo sofreímos a fuego suave hasta que esté tierno.
- Añadimos el tomate, el concentrado y las especias y dejamos reducir hasta que esté seco.
- Rectificamos la acidez con un poco de azúcar y salpimentamos al gusto.
- Berenjenas
- Para el rebozado hacemos tres recipientes por separado: en uno ponemos la harina; en otro mezclamos los huevos con la leche y en el último, el pan rallado con un poco de parmesano rallado y orégano.
- Cortamos las berenjenas a un grosor de medio centímetro, las salamos y las ponemos en un colador durante 1 hora.
- Pasado ese tiempo, las escurrimos, las pasamos por harina, mezcla de huevo y mezcla de pan y las freímos por tandas en una sartén con aceite de girasol a fuego alto para que se doren. Las vamos reservando en papel absorbente.
- Ahora solo queda el montaje. Para ello, ponemos una capa de salsa de tomate en el fondo de la bandeja, encima una capa de berenjena, encima más salsa de tomate y luego queso rallado. Repetimos estas capas 1 o 2 veces más o como os guste.
