- Picamos los ingredientes pequeñitos y sofreímos ajo, cebolla y puerro. Una vez empiecen a pocharse, incorporamos la berenjena y añadimos el comino. Removemos e incorporamos el vino blanco y dejamos que se vaya cocinando a fuego medio.
- Cuando veamos que la berenjena está hechita, incorporamos el pimiento choricero, el tomate frito, el caldo de pollo y dejamos que se guise hasta que no quede nada de caldito y dejamos enfriar.
- Una vez este frío, rallamos el queso y lo incorporamos en la mezcla. Este se fundirá cuando lo metamos en el horno. Cogemos la pasta brick y hacemos tiras largas de 3 dedos de ancho aprox. Esto ya varía en función de cómo queráis que sean las samosas de grandes. Incorporamos una cucharada de la mezcla y le damos forma (yo miré un video en YouTube). Para que se peguen untamos el final con mantequilla fundida o clara de huevo, sellamos y las ponemos en una bandeja previamente engrasada.
- Una vez tengamos todas, las pintamos con mantequilla o clara y al horno a 180° hasta que se doren y a degustarlas.
