  1. Batimos un huevo, echamos la leche y aceite. Después en otro cuenco mezclamos la harina, el pimentón y la levadura. Mezclamos todo hasta hacerse una masa que amasamos con nuestras manos y quedando una masa consistente en forma de bola, dejándola reservada en un bol con un paño tapándola una horita.
  2. Mientras hacemos el relleno, cortamos en trozos la berenjena y la picamos con una picadora quedando casi como un puré echandola en una sartén con aceite esperando que se sofría y se haga haciendo lo mismo con la cebolla.
  3. Una vez está hecha la verdura, añadimos la lata de atún, vertemos el tomate frito y removemos para que se quede con el sabor dejándolo unos 5 minutos con fuego bajo.
  4. Retiramos la sartén del fuego y dejamos que se enfríe. Preparamos la masa y cortamos la bola de masa en dos, creando dos bolas más pequeñas (en mi caso cree 4 bolas porque hice dos empanadas) de ahí amasamos con un rodillo, cada bola hasta darlas una forma redonda aplanada.
  5. Las colocamos sobre una bandeja del horno con papel de horno y sobre una de ellas vertemos el relleno. Lo cubrimos con la otra masa cerrándolo por los laterales bien, hacemos un agujero en el centro si no antes podemos usar un huevo batido para pintar la superficie de la empanada para que quede doradita.
  6. Introducimos en el horno precalentado a 190º, y la dejamos 45 minutos hasta que esté lista dejamos enfriar y listo! Buenísima al día siguiente!
