- Dejamos enfriar y sacamos la carne de las berenjenas, desechando su piel.
- Troceamos los filetes de salmón con un cuchillo afilado.
- Troceamos también la carne de las berenjenas.
- Dejamos un rato la carne de las berenjenas escurrir en el escurridor, para que suelten el excedente de agua.
- Con la ayuda de unos aros de emplatar. Vamos colocando capas alternas de berenjena y salmón en los dos platos que usaremos para servir.
- Terminamos de llenar los moldes de emplatar con yogurt griego.
- Decoramos colocando los mejillones sobre el yogurt.
- Guardar en el frigorífico hasta el momento de servir, sin desmoldar.
