  1. Calentamos el horno a 180 grados, lavamos bien las berenjenas y las cortamos por la mitad a lo largo, les hacemos unas rallas con la punta del cuchillo, le ponemos un poco de aceite y las llevamos a el horno (unos veinte minutos más o menos).
  2. En una cazuela ponemos tres cucharadas de aceite, mezclamos bien la carne picada salpimentada al gusto, la doramos en la cazuela removiéndola hasta que se vaya quedando como granos de arroz, una vez consideremos que ya está bastante echa la retiramos y reservamos.
  3. Entre tanto sacamos las berenjenas del horno y con una cuchara le vamos quitando la carne, con cuidado de no romper la piel, y la picamos para que nos quede como una masa.
  4. En el mismo aceite que hemos hecho la carne, doramos los ajos y la cebolla  muy bien picada hasta que quede transparente, le añadimos los chiles.
    Cuando consideremos que ya está hecha la cebolla, le añadimos la carne picada y la carne de las berenjenas le damos unas cuantas vueltas para que se mezcle bien todo el relleno y lo separamos del fuego.
  5. Ya podemos ir rellenando las berenjenas y las espolvoreamos con el queso rallado, las llevamos al horno para gratinar, cuando las veamos doradas ya las podemos retirar.
