  2. Sobras de rodajas de berenjenas rebozadas
  3. 1 cebolla
  4. 1 tomate

    Solo nos resta realizar la tortilla.
  4. Batimos los 4 huevos, añadimos la sal, la cebolla frita y las rodajas de berenjena rebozada y mezclamos.
  5. Colocamos un generoso chorro de aceite en la sartén cuadrada (también sirve redonda) y volcamos los huevos batidos con la berenjena, realizando la tortilla, dándole las vueltas que consideremos necesarias con la ayuda de una tapadera.
  6. Cortamos la tortilla en cuatro tiras, colocamos una tira de tortilla en cada mitad inferior de los bocadillos, cubrimos la tortilla con hojas de lechuga y a su ver tapamos la lechuga con las mitades superiores de nuestros panecillos como veis en la foto.
  7. Cada mitad de los bocadillos los cortamos también en dos partes, para facilitar que no se nos desmonten al comerlos.
    Servir aún caliente, aunque frío también queda rico este bocadillo.
